  1. Prepare the Aromatics: Start by heating 2 tablespoons of olive oil in a medium skillet over medium heat. Add 80g of finely diced onion and 2 cloves of minced garlic, sautéing for about 5-7 minutes until the onion is translucent and softened. Remove from heat and let the mixture cool for a few minutes while you prepare the meatloaf mixture.
  2. Mix the Meatloaf: In a large mixing bowl, combine 900g of ground chicken, the cooled onion and garlic mixture, 60g of seasoned breadcrumbs, 2 teaspoons of milk, 30g of grated Parmesan cheese, 1 egg, 2 tablespoons of chopped fresh parsley, 1 teaspoon of Italian seasoning, and ½ teaspoon of salt. Use your hands or a spoon to mix everything gently until just combined, taking care not to overmix.
  3. Shape the Meatloaf: Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. Transfer the chicken mixture onto the prepared sheet and shape it into a loaf, roughly 20cm x 10cm. Create a shallow trench along the center and place the mozzarella strings (cut into 1cm slices) inside, then carefully fold the mixture over and seal it, ensuring the cheese is fully enveloped.
