  • 2 cups fresh spinach finely chopped
  • 1 cup feta cheese crumbled, or vegan cheese for dairy-free version
  • 1 cup almond flour or other gluten-free flour
  • 1 large egg or flax egg for vegan option
  • 2 tablespoons olive oil or melted coconut oil
  • 1 teaspoon garlic powder or fresh minced garlic

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine chopped spinach, crumbled feta, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Mix until well incorporated.
  3. Scoop tablespoon-sized portions onto the baking sheet and flatten each to about 1/4 inch thick, leaving space between each.
  4. Bake for 15-18 minutes until edges are golden brown and tops appear dry.
  5. Allow to cool on the baking sheet for 5 minutes before serving.
