- In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing for 3-4 minutes until fragrant.
- Add ground beef, breaking it apart with a wooden spoon. Season with cumin and paprika, along with salt and pepper. Cook for 5-7 minutes until browned.
- Preheat oven to 350°F (175°C). Warm pita pockets on a baking sheet for about 5 minutes or microwave for 30 seconds.
- Open each warm pita pocket gently and fill with the beef mixture, topping with fresh vegetables and feta cheese.
- Drizzle tzatziki sauce over the filled pockets and serve immediately while warm.
