For the Seasoning
  • 1 teaspoon dried oregano thyme can be substituted
  • 1 teaspoon dried basil fresh basil can be used for added flavor

For the Cheese Layer
  • 1 cup shredded mozzarella cheese can substitute with feta cheese for variation
  • 1/2 cup grated Parmesan cheese
For Garnish
  • 1 tablespoon fresh parsley chopped

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Gather all ingredients and equipment.
  2. In a large mixing bowl, combine chicken and zucchini. Drizzle with olive oil, add minced garlic, lemon juice, oregano, basil, salt, and pepper.
  3. Spread the chicken and zucchini mixture evenly in a 9x13-inch baking dish.
  4. Sprinkle mozzarella and Parmesan cheese over the top of the mixture.
  5. Bake uncovered for 25-30 minutes, until chicken reaches 165°F and cheese is golden brown.
  6. Remove from the oven, let cool for a few minutes, and top with fresh parsley before serving.
