- In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes, or until translucent. Stir in 2 minced garlic cloves and cook for an additional 30 seconds.
- In a large mixing bowl, combine the sautéed onion and garlic mixture with 2 cups of fresh spinach, 1 pound of ground chicken, and ½ cup of breadcrumbs. Add ½ cup of Greek yogurt, 1 tablespoon of dill, 2 tablespoons of lemon juice, and your spices: 1 teaspoon each of oregano, paprika, and cumin. Mix gently until just combined.
- Scoop the mixture and shape it into approximately eight patties, each about ½ inch thick. Place the formed patties on a plate.
- In the skillet, add another tablespoon of olive oil and heat. Place the patties into the skillet and cook for about 5-6 minutes on each side, or until golden and cooked through.
- Transfer the patties to a paper towel-lined plate to drain excess oil. Serve warm with a fresh side salad or in pita bread.
