  • 2 cups Spinach fresh or thawed frozen, drained
  • 1 cup Breadcrumbs gluten-free for gluten-free option
  • 1/2 cup Greek Yogurt can substitute with sour cream or dairy-free yogurt
  • 1 small Onion finely diced
  • 2 cloves Garlic minced
  • 1 table spoon Dill or parsley or mint
  • 2 tablespoons Lemon Juice fresh recommended
  • 1 teaspoon Oregano adjust according to preference
  • 1 teaspoon Paprika sweet or smoked based on preference
  • 1/2 teaspoon Cumin optional

Method
 

Step-by-Step Instructions
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté finely diced onions until translucent, about 5 minutes. Add minced garlic and stir for 30 seconds.
  2. In a large mixing bowl, combine the sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Divide the mixture into equal portions and shape them into patties, about ½ inch thick, aiming for approximately 8 patties.
  4. In the skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Cook the patties for about 5-6 minutes on each side until golden brown.
  5. Remove the patties and place them on a paper towel-lined plate to drain excess oil. Serve warm with fresh veggies or your favorite dipping sauce.
