- Preheat your oven to 400°F (200°C) and grease a medium baking dish with olive oil.
- Chop the cherry tomatoes, red onion, and garlic into bite-sized pieces and spread them across the base of the prepared baking dish.

- Pat the cod fillets dry and season both sides with salt and black pepper before placing on top of the seasoned vegetables.
- Drizzle the cod with olive oil and zest it with fresh lemon, then place the baking dish in your preheated oven and let it bake for 20 minutes.
- After 20 minutes, check the cod for doneness; it should be opaque and flake easily with a fork. Return to the oven if needed.
- Squeeze fresh lemon juice over the cod and sprinkle chopped parsley before serving.
