  • ½ cup freshly grated parmesan cheese pre-grated cheese is an option
  • ½ cup sun-dried tomatoes or fresh tomatoes if in season
  • 1 tsp smoked paprika optional
  • 1 tsp dried Italian seasoning or mix of dried oregano and basil
For the Pasta
  • ½ lb penne pasta or fusilli/rigatoni
  • fresh basil, chopped for garnish

Step-by-Step Instructions
  1. Season and sear the chicken by adding salt and pepper to the chicken breast, then sear in olive oil until golden brown and cooked through.
  2. Melt butter in the same skillet, add garlic, and sauté for 30 seconds. Sprinkle flour and whisk until smooth.
  3. Gradually add chicken broth and heavy cream, cooking until thickened. Mix in parmesan until melted.
  4. Stir in sun-dried tomatoes, smoked paprika, and Italian seasoning. Simmer to meld flavors.
  5. Combine the seared chicken with the sauce and cook for 2 minutes. Toss in cooked penne pasta.
  6. Garnish with chopped basil and serve immediately.
