- Preheat your oven to 425°F (220°C) to ensure even cooking and caramelization.
- Core and chop the selected apples into ½” cubes, cut the carrots diagonally into ¼” thick slices, dice the onion, and finely chop the garlic. Set aside.
- In a large bowl, whisk together olive oil (or aquafaba), maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme.
- Add the chopped apples, carrots, diced onion, and garlic to the bowl with your glaze. Toss until well-coated.
- Spread the glazed vegetable mixture evenly onto a metal baking pan in a single layer.
- Place the pan in the preheated oven and roast for 15 minutes. Flip the contents for even browning, then continue roasting for an additional 10-15 minutes, or until tender and caramelized.
