  • 2 medium Apples Choose Honeycrisp, Braeburn, or Jonagold.
  • 1 medium Onion Diced into ½” pieces.
  • 5 cloves Garlic Chopped or minced.
  • 3 tablespoons Olive Oil Or aquafaba for a vegan option.
For the Glaze
  • ¼ cup Maple Syrup
  • 2 tablespoons Dijon Mustard Use stone ground.
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Thyme Fresh or dried.

Method
 

Preparation Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Core and chop the apples into ½” cubes.
  3. Slice the carrots into ¼” thick diagonal pieces.
  4. Dice the onion into ½” pieces and mince the garlic.
  5. In a mixing bowl, combine olive oil (or aquafaba), maple syrup, Dijon mustard, salt, black pepper, and thyme.
  6. Add the sliced carrots, apple cubes, diced onion, and chopped garlic into the bowl with the glaze, tossing to coat.
  7. Transfer the mixture onto a baking sheet, spreading it out evenly.
  8. Roast for 15 minutes, then flip the vegetables and roast for an additional 10-15 minutes until tender.
