- Preheat your oven to 425°F (220°C).
- Core and chop the apples into ½” cubes.
- Slice the carrots into ¼” thick diagonal pieces.
- Dice the onion into ½” pieces and mince the garlic.
- In a mixing bowl, combine olive oil (or aquafaba), maple syrup, Dijon mustard, salt, black pepper, and thyme.
- Add the sliced carrots, apple cubes, diced onion, and chopped garlic into the bowl with the glaze, tossing to coat.
- Transfer the mixture onto a baking sheet, spreading it out evenly.
- Roast for 15 minutes, then flip the vegetables and roast for an additional 10-15 minutes until tender.
