- Preheat your oven to 425°F (220°C). Allow about 10-15 minutes for the oven to reach the desired heat.
- Core and chop your apples into ½” cubes and cut the carrots diagonally into ¼” thick slices. Dice the onion and finely chop the garlic.
- In a mixing bowl, whisk together olive oil (or aquafaba), maple syrup, Dijon mustard, salt, black pepper, and thyme.
- Add the carrots, apples, onion, and garlic to the bowl and toss until well-coated with the glaze.
- Spread the mixture onto a metal baking sheet in a single layer, leaving space between each piece.
- Roast in the oven for 15 minutes, then flip the vegetables and roast for another 10-15 minutes until tender and caramelized.
- Remove from oven, let cool slightly, and transfer to a serving dish.
