  • 1 medium Onion diced
  • 2 cloves Garlic finely chopped
For the Glaze
  • 2 tablespoons Olive Oil or Aquafaba use aquafaba for oil-free option
  • 2 tablespoons Maple Syrup
  • 1 tablespoon Stone Ground Dijon Mustard
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Thyme or substitute with rosemary or sage

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Allow about 10-15 minutes for the oven to reach the desired heat.
  2. Core and chop your apples into ½” cubes and cut the carrots diagonally into ¼” thick slices. Dice the onion and finely chop the garlic.
  3. In a mixing bowl, whisk together olive oil (or aquafaba), maple syrup, Dijon mustard, salt, black pepper, and thyme.
  4. Add the carrots, apples, onion, and garlic to the bowl and toss until well-coated with the glaze.
  5. Spread the mixture onto a metal baking sheet in a single layer, leaving space between each piece.
  6. Roast in the oven for 15 minutes, then flip the vegetables and roast for another 10-15 minutes until tender and caramelized.
  7. Remove from oven, let cool slightly, and transfer to a serving dish.
