  • 1 small red bell pepper sliced
  • 1 cup cherry tomatoes halved

  • 1/4 cup fresh mint leaves
For the Dressing
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or agave nectar for vegan option
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Peel and slice the mangoes into bite-sized chunks.
  2. Finely chop the red onion, dice the cucumber, and slice the red bell pepper.
  3. Halve the cherry tomatoes and set aside all prepared ingredients in a large mixing bowl.
Dressing
  1. In a separate bowl, whisk together lime juice, honey, and olive oil.
  2. Add salt and black pepper to taste, whisk until well combined.
Combine Ingredients
  1. Layer the mango, red onion, cucumber, bell pepper, and tomatoes in the salad bowl.
