- Preheat the oven to 400°F (200°C) and gather your baking tray and parchment paper.
- Wash and cube the potatoes into 1/2 inch pieces. Toss with olive oil, salt, oregano, garlic powder, and paprika. Spread on the baking tray and bake for 30–35 minutes, flipping halfway through.
- Dice the tomato, jalapeño, and half a red onion. Combine with chopped cilantro and lime juice. Season with salt and pepper, then set aside.
- In a skillet over medium heat, cook the ground beef with taco seasoning for about 8–10 minutes until browned.
- Mix mayonnaise, sriracha, lemon juice, and black pepper in a bowl until smooth.
- Assemble bowls with roasted potatoes, taco meat, pico de gallo, and drizzle with sriracha mayo.
