Ingredients
  

For the Taco Meat
  • 1 pound Lean Ground Beef or substitute with ground turkey, chicken, or lentils
  • 2 tablespoons Taco Seasoning store-bought or homemade
For the Potatoes
  • 4 medium-large Potatoes (Yukon Gold recommended) or sweet potatoes
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Oregano
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
For the Pico de Gallo
  • 1 large Tomato or cherry tomatoes
  • 1 medium Jalapeño or bell peppers
  • 1/2 medium Red Onion or yellow onion
  • 1/4 cup Cilantro or parsley
  • 1 lime Lime
For the Creamy Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Sriracha adjust to taste
  • 1 tablespoon Lemon Juice adjust to taste
  • 1/4 teaspoon Ground Black Pepper to taste

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and gather your baking tray and parchment paper.
  2. Wash and cube the potatoes into 1/2 inch pieces. Toss with olive oil, salt, oregano, garlic powder, and paprika. Spread on the baking tray and bake for 30–35 minutes, flipping halfway through.
  3. Dice the tomato, jalapeño, and half a red onion. Combine with chopped cilantro and lime juice. Season with salt and pepper, then set aside.
  4. In a skillet over medium heat, cook the ground beef with taco seasoning for about 8–10 minutes until browned.
  5. Mix mayonnaise, sriracha, lemon juice, and black pepper in a bowl until smooth.
  6. Assemble bowls with roasted potatoes, taco meat, pico de gallo, and drizzle with sriracha mayo.
