Ricotta Sauce
  • 1 cup Ricotta Whole milk ricotta gives the best texture
  • cup Parmesan Cheese Freshly grated enhances the flavor
  • 1 unwaxed lemon Lemon Zest and juice
  • 1 Tbsp Extra Virgin Olive Oil Plus extra for drizzling
  • 1 clove Garlic Grated or pressed
  • Salt and Black Pepper To taste

  • 8 oz Spinach Fresh baby spinach

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to package directions until al dente, about 8-10 minutes.
  2. In a mixing bowl, combine the ricotta, olive oil, Parmesan, garlic, and the zest and juice from the lemon. Mix until creamy, season with salt and pepper.
  3. In the last minute of pasta cooking, reserve ½ cup of the pasta water and add the spinach to the pot, stirring until wilted.
  4. Drain the pasta and spinach mixture, then return to the pot.
  5. Pour the ricotta sauce into the pasta and spinach. Mix, adding reserved pasta water until desired consistency is reached.
  6. Serve immediately, garnished with olive oil, Parmesan, and optional lemon wedges.
