- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined. Incorporate melted butter, egg, and vanilla extract.
- Pour the batter into the prepared baking dish, spreading it evenly across the bottom.
- In a separate bowl, gently mash the raspberries, then add fresh lemon juice and lemon zest, mixing until well combined.
- Spoon the raspberry mixture over the batter and gently swirl it into the batter with a knife or toothpick.
- Bake the bars for 25-30 minutes until the edges are golden brown and a toothpick inserted comes out clean.
