Preparation Steps
  1. Place the boneless, skinless chicken breasts at the bottom of your slow cooker.
  2. In a bowl, combine chicken broth, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Whisk thoroughly.
  3. Pour the broth mixture over the chicken breasts, covering them evenly.
  4. Sprinkle the rinsed rice around the chicken in a uniform layer.
  5. Cover the slow cooker and cook on low for approximately 4-5 hours.
  6. About 30 minutes before cooking time is complete, sprinkle frozen peas on top.
  7. After cooking, stir gently and serve with fresh parsley and lemon slices.
