Step-by-Step Instructions
  1. Season chicken breasts with salt, pepper, and freshly zested lemon. Set aside to marinate.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side.
  4. Transfer chicken to a plate to rest.
  5. Sauté minced garlic in the residual oil for about 1 minute until fragrant.
  6. Stir in uncooked orzo and toast for 1-2 minutes.
  7. Pour in chicken broth and lemon juice, bring to a boil, then simmer covered for 10-12 minutes.
  8. Add fresh spinach or kale and cook for an additional 2-3 minutes until wilted.
  9. Dice rested chicken and return to the skillet with crumbled feta, folding gently to combine.
  10. Taste and adjust seasoning with salt and pepper as needed.
  11. Serve warm, garnished with fresh parsley.
