Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Toss the halved baby potatoes in a bowl with 3 tablespoons of olive oil, garlic powder, paprika, salt, and pepper. Spread the seasoned potatoes on a baking sheet.
  3. Place the baking sheet with potatoes in the oven and roast for about 20 minutes until golden brown and tender.
  4. Toss broccoli florets with 2 tablespoons of olive oil, salt, and pepper. Add to the baking sheet with potatoes and roast for an additional 15-20 minutes.
  5. While the veggies roast, melt 1/4 cup of butter in a skillet over medium heat. Add minced garlic and sauté for about 1 minute. Stir in fresh lemon juice, salt, and pepper.
  6. Place salmon fillets skin-side down in the skillet with lemon butter sauce. Cook for 4-5 minutes then flip and cook for another 3-4 minutes until flaky.
  7. Plate crispy potatoes and tender broccoli alongside seasoned salmon. Drizzle with lemon butter sauce and garnish.
