Method
 

Preparation
  1. Marinate the Chicken: In a mixing bowl, whisk together soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger. Add chicken, cover, and marinate for at least 20 minutes.
  2. Prepare the Cabbage Slaw: Mix shredded cabbage and julienned carrot in a bowl. In another bowl, whisk together mayonnaise, rice vinegar, sugar, salt, and pepper. Toss with cabbage and carrots and chill.
  3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook marinated chicken thighs for 6-7 minutes each side until the internal temperature reaches 165°F (74°C).
  4. Toast the Buns: Butter the inside of the buns and toast them in a non-stick skillet until golden brown.
  5. Assemble the Sandwich: Place sliced chicken on the bottom half of each bun, drizzle with extra marinade if desired, top with slaw, and cover with the top bun.
