Preparation
- Marinate the Chicken: In a mixing bowl, whisk together soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger. Add chicken, cover, and marinate for at least 20 minutes.
- Prepare the Cabbage Slaw: Mix shredded cabbage and julienned carrot in a bowl. In another bowl, whisk together mayonnaise, rice vinegar, sugar, salt, and pepper. Toss with cabbage and carrots and chill.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook marinated chicken thighs for 6-7 minutes each side until the internal temperature reaches 165°F (74°C).
- Toast the Buns: Butter the inside of the buns and toast them in a non-stick skillet until golden brown.
- Assemble the Sandwich: Place sliced chicken on the bottom half of each bun, drizzle with extra marinade if desired, top with slaw, and cover with the top bun.
