  • 1 lb Dry Navy Beans Soaked overnight for quicker cooking
  • 6 cups Chicken Broth Use low-sodium broth for less salt
  • 1 lb Chicken Breast (Diced) Shredded rotisserie chicken can be used for ease
  • 1 medium Diced Onion Yellow onions or shallots can be used
  • 4 cloves Minced Garlic Fresh garlic is preferred
  • 2 stalks Diced Celery Omit for low-carb option
  • 1 can Diced Green Chilies Canned or fresh jalapeños for more heat
  • 15.25 oz Corn Canned corn is convenient
For the Spices
  • 2 ts Cumin Earthy flavor, can substitute coriander
  • 1 ts Dried Oregano Can substitute with Italian seasoning
  • 1 ts White Pepper Black pepper can be used
  • 1 ts Red Pepper Flakes Adjust quantity for spice preference
  • 1 ts Black Pepper Basic seasoning
For Creaminess
  • 2 tbsp Butter Can replace with olive oil
  • 8 oz Cream Cheese Low-fat options can be used

Method
 

Step-by-Step Instructions
  1. Rinse 1 pound of dry navy beans thoroughly under cold water. Soak them overnight if using dried beans.
  2. Combine the soaked navy beans, 6 cups of chicken broth, and 2 tablespoons of butter in your slow cooker. Add 1 pound of diced chicken breast, 4 cloves of minced garlic, 1 diced onion, and 2 diced celery stalks. Stir in 1 can of diced green chilies.
  3. Season the mixture with 2 teaspoons of cumin, 1 teaspoon of dried oregano, 1 teaspoon of white pepper, and 1 teaspoon of black pepper. Add red pepper flakes to taste.
  4. Set your slow cooker to low and cover it. Cook for 6 hours.
  5. About 30 minutes before serving, stir in 8 ounces of cream cheese until melted and smooth.
  6. Taste for seasoning and adjust as necessary. Stir well and serve the killer white chili.
