Method

Step-by-Step Instructions
  1. Create the Spice Rub: In a small bowl, mix together chili powder, ground cumin, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Set aside.
  2. Coat the Chicken: Cut chicken into bite-sized cubes and toss in the spice rub until evenly coated. Let rest for a few minutes.
  3. Sear the Chicken: Heat olive oil in a skillet over medium-high heat, add seasoned chicken cubes, and sear for 6-8 minutes until golden brown. Remove from skillet.
  4. Prepare the Cheese Sauce: Lower heat, add cream cheese and heavy whipping cream, and stir for 3-4 minutes until smooth.
  5. Add the Cheese: Gradually stir in Pepper Jack cheese until melted, adding more cream if the sauce is too thick.
  6. Combine and Heat: Return seared chicken to skillet, stirring to coat in cheese sauce, and let simmer for 1-2 minutes.
  7. Garnish and Serve: Remove from heat, sprinkle with fresh cilantro, and serve immediately.
