  3. Melt the shredded mozzarella cheese in the microwave for about 30 seconds until gooey. Mix with the cream cheese mixture.
  4. Spoon the filling onto the parchment-lined baking sheet, spreading it into thin rectangles.
  5. Beat an egg in a small bowl and brush it over the tops of each rectangle. For egg-free, brush with water and olive oil.
  6. Bake for 12-15 minutes or until golden brown and crispy around the edges.
