Preparation Steps
- In a medium bowl, whisk together olive oil, lemon juice, vinegar, garlic, paprika, oregano, salt, pepper, and chili.
- Place chicken pieces into a zip-top bag or bowl. Pour the marinade over the chicken, making sure each piece is coated. Seal and refrigerate for at least 4 hours, ideally overnight.
- Preheat your grill to medium-high heat, about 15 minutes before grilling.
- Pat the marinated chicken dry with paper towels. Grill chicken skin-side down for 5-6 minutes until golden brown, then flip and grill for another 5-8 minutes until cooked through.
- Remove chicken from grill and let it rest for 5 minutes before serving with fresh herbs and lemon.
