  • 1/4 cup olive oil or avocado oil
  • 1/4 cup lemon juice freshly squeezed
  • 2 tablespoons vinegar red wine or apple cider
  • 4 cloves garlic minced
  • 1 tablespoon paprika sweet & smoked
  • 1 tablespoon oregano dried or fresh
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon chili optional, fresh or flakes

  • 4 pieces chicken thighs or breasts

Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, lemon juice, vinegar, garlic, paprika, oregano, salt, pepper, and chili.
  2. Place chicken pieces into a zip-top bag or bowl. Pour the marinade over the chicken, making sure each piece is coated. Seal and refrigerate for at least 4 hours, ideally overnight.
  3. Preheat your grill to medium-high heat, about 15 minutes before grilling.
  4. Pat the marinated chicken dry with paper towels. Grill chicken skin-side down for 5-6 minutes until golden brown, then flip and grill for another 5-8 minutes until cooked through.
  5. Remove chicken from grill and let it rest for 5 minutes before serving with fresh herbs and lemon.
