Topping
  • 8 ounces Brie Cheese Camembert or cream cheese can be used as alternatives.
  • 1 cup Dried Cranberries Fresh cranberries can be substituted, may need cooking down.
  • 1 cup Toasted Pecans Walnuts or pistachios can be substituted.
  • 2 sprigs Fresh Rosemary or Thyme Optional garnish.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ¼-inch rounds and arrange on the baking sheet.
  3. Drizzle with olive oil, seasoning with salt and pepper, and roast for 20-25 minutes, flipping halfway.
  4. Add a slice of brie cheese on top of each round and return to the oven for 5 minutes to melt.
  5. Sprinkle dried cranberries and toasted pecans on top before serving; garnish with fresh herbs if desired.
