Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 13×9-inch baking dish with butter.
  2. Season both sides of the chicken breasts with salt, lemon pepper, and paprika and place them in the greased baking dish. Bake for 15-20 minutes until partially cooked.
  3. In a skillet, heat oil over medium heat, add spinach, and cover for 1-2 minutes until wilted. Stir in minced garlic and half-and-half, bring to a gentle boil, then add mozzarella cheese until melted and creamy.
  4. In another skillet, heat oil over medium-high heat, add sliced mushrooms and sauté for 1-2 minutes until golden brown.
  5. Remove the chicken from the oven and layer the creamy spinach mixture on top, followed by the sautéed mushrooms and crispy bacon. Top each breast with a slice of Pepper Jack cheese.
