- Preheat your oven to 375°F (190°C) and grease a 13×9-inch baking dish with butter.
- Season both sides of the chicken breasts with salt, lemon pepper, and paprika and place them in the greased baking dish. Bake for 15-20 minutes until partially cooked.
- In a skillet, heat oil over medium heat, add spinach, and cover for 1-2 minutes until wilted. Stir in minced garlic and half-and-half, bring to a gentle boil, then add mozzarella cheese until melted and creamy.
- In another skillet, heat oil over medium-high heat, add sliced mushrooms and sauté for 1-2 minutes until golden brown.
- Remove the chicken from the oven and layer the creamy spinach mixture on top, followed by the sautéed mushrooms and crispy bacon. Top each breast with a slice of Pepper Jack cheese.
