Step-by-Step Instructions for Cowboy Club Sandwich
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lay out the bacon strips in a single layer. Bake for 15-20 minutes until crispy.
  2. In a medium bowl, blend mayo and BBQ sauce to create a smooth, creamy spread. Set aside.
  3. Spread butter on one side of each slice of sourdough bread. Set aside.
  4. In a skillet, add the buttered bread slices butter-side down. Place cheddar cheese on top of two slices and grill until the bread is golden brown, about 2-3 minutes.
  5. Layer cooked chicken breast on the two slices with melted cheese.
  6. Spread BBQ-mayo mixture on the unbuttered sides of the remaining two slices of bread.
  7. On top of the chicken, add avocado, tomato, bacon, and romaine lettuce. Season with salt and pepper.
  8. Carefully place the BBQ-mayo side down on top of the layered ingredients.
  9. Heat the skillet to medium, butter the top of the sandwiches, and grill for 2-3 minutes per side until golden brown and cheese is melted.
  10. Slice each sandwich diagonally and serve warm with your favorite sides.
