Step-by-Step Instructions for Cowboy Club Sandwich
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lay out the bacon strips in a single layer. Bake for 15-20 minutes until crispy.
- In a medium bowl, blend mayo and BBQ sauce to create a smooth, creamy spread. Set aside.
- Spread butter on one side of each slice of sourdough bread. Set aside.
- In a skillet, add the buttered bread slices butter-side down. Place cheddar cheese on top of two slices and grill until the bread is golden brown, about 2-3 minutes.
- Layer cooked chicken breast on the two slices with melted cheese.
- Spread BBQ-mayo mixture on the unbuttered sides of the remaining two slices of bread.
- On top of the chicken, add avocado, tomato, bacon, and romaine lettuce. Season with salt and pepper.
- Carefully place the BBQ-mayo side down on top of the layered ingredients.
- Heat the skillet to medium, butter the top of the sandwiches, and grill for 2-3 minutes per side until golden brown and cheese is melted.
- Slice each sandwich diagonally and serve warm with your favorite sides.
