  • 8 ounces Pearl Mozzarella Balls can swap with feta
  • 1 cup Corn Kernels fresh or frozen
  • 2 medium Fresh Peaches or nectarines
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Fresh Basil chopped
For the Dressing
  • 1/2 cup Extra Virgin Olive Oil
  • 3 tablespoons Hot Honey or regular honey mixed with chili flakes
  • 1 tablespoon Dijon Mustard or whole grain mustard
  • 2 tablespoons Red Wine Vinegar or apple cider vinegar
  • 1 clove Garlic minced
  • to taste Salt & Pepper for seasoning

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Lay prosciutto slices in a single layer and bake for 10-15 minutes until golden brown and crispy.
  3. While prosciutto bakes, cook tortellini according to package instructions, drain, and rinse under cold water.
  4. In a large bowl, combine cooled tortellini, pearl mozzarella balls, corn, peaches, cherry tomatoes, and basil.
  5. Chop cooled prosciutto into bite-sized pieces and fold into the salad mixture.
  6. Whisk together olive oil, hot honey, mustard, vinegar, garlic, salt, and pepper until well blended.
  7. Drizzle dressing over salad, toss gently to coat, and chill for 30 minutes before serving.
