Step-by-Step Instructions
  1. In a medium bowl, whisk together honey, 2 tablespoons lime juice, lime zest, minced garlic, salt, and pepper until smooth. Coat the chicken breasts in the marinade and let it sit for 15 to 30 minutes.
  2. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6 to 7 minutes on each side until golden brown and cooked through. Let rest for 5 minutes.
  3. In a bowl, combine the cooked rice, chopped cilantro, 1 tablespoon lime juice, and a pinch of salt. Mix well.
  4. Cut the avocados in half, remove the pits, slice the flesh, and drizzle with additional lime juice. Season with salt and pepper.
