- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- Cream together ½ cup of softened unsalted butter and ¾ cup of granulated sugar until fluffy.
- Add in the 2 large eggs and 1 ½ teaspoons of vanilla extract, mixing until smooth.
- Whisk together 1 ½ cups of all-purpose flour, 1 ¾ teaspoons of baking powder, and 1 teaspoon of ground cinnamon.
- Gradually add the dry mixture to the wet mixture, alternating with ½ cup of milk, and stir gently until combined.
- Fold in 2 medium chopped apples into the batter.
- Pour half of the batter into the loaf pan, sprinkle half of the brown sugar, then add the remaining batter and finish with the rest of the brown sugar.
- Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
- Allow the loaf to cool in the pan for 10-15 minutes before transferring to a wire rack and glazing if desired.
