Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Heat a tablespoon of olive oil over medium heat and sauté minced garlic for 1-2 minutes.
  3. Add chopped spinach and cook until wilted, about 3-5 minutes.
  4. Combine shredded chicken, wilted spinach, artichoke hearts, Greek yogurt, mozzarella and Parmesan cheese. Season with oregano, onion powder, salt, and black pepper. Mix well.
  5. Lightly grease a baking dish with olive oil, pour in the mixture evenly.
  6. Sprinkle breadcrumbs over the top if desired.
  7. Bake for 30-35 minutes until golden-brown and bubbly.
  8. Let cool for 5-10 minutes before serving.
