Ingredients
  

For the Scone Dough
  • 2 cups all-purpose flour King Arthur flour recommended
  • 1/4 cup sugar can substitute with coconut sugar
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 tablespoon lemon zest freshly grated
  • 1/2 cup cold unsalted butter cut into cubes
  • 1 large egg
  • 1/2 cup heavy cream or milk as a substitute
  • 1/4 cup sour cream
  • 1/2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon ground nutmeg
  • 1 cup fresh strawberries chopped
For the Lemon Glaze
  • 1 cup powdered sugar
  • 1/2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest

Method
 

Baking Instructions
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Zest one lemon and chop a cup of strawberries.
  3. In a bowl, combine 2 cups of flour, 1/4 cup of sugar, 1 tablespoon of baking powder, and a pinch of salt.
  4. Cut 1/2 cup of cold butter into the flour mixture until it resembles coarse crumbs.
  5. In another bowl, whisk together 1 egg, 1/2 cup of cream, 1/4 cup of sour cream, lemon juice, and vanilla.
  6. Pour the wet ingredients into the dry and stir gently until just combined.
  7. Fold in the chopped strawberries.
  8. Shape the dough into a circle about 1 inch thick and slice into 8 wedges.
  9. Brush the tops with cream and bake for 15-16 minutes until golden.
  10. Whisk together glaze ingredients and drizzle over cooled scones.
