- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with butter or non-stick spray.
- In a mixing bowl, combine all-purpose flour, rolled oats, brown sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Press into the baking dish and pre-bake for 10 minutes.
- In another bowl, toss sliced peaches with lemon juice and cinnamon. Spread the peach mixture over the pre-baked crust.
- For the topping, mix remaining flour, oats, brown sugar, and cinnamon. Stir in melted butter until crumbly and sprinkle over the peach filling.
- Bake for 25–30 minutes until the top is golden brown and the filling is bubbling.
- Allow the bars to cool in the pan for 30 minutes before slicing into squares.
