  • 1/4 cup Soy Sauce or gluten-free tamari

  • 1 cup Pineapple fresh or drained canned
  • 2 medium Bell Peppers mix varieties for presentation
  • 1 medium Red Onion or white/yellow onion
For the Glaze
  • 1/4 cup Honey or brown sugar, maple syrup is an alternative
  • 3 cloves Garlic fresh or powdered
  • 1 tablespoon Ginger fresh or powdered
For the Cooking
  • 2 tablespoons Olive Oil or avocado oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together soy sauce, fresh pineapple juice, honey, minced garlic, and grated ginger until combined.
  3. Pat the chicken thighs dry and coat them with half of the prepared sauce. Allow to marinate for at least 15 minutes.
  4. Line a large sheet pan with parchment paper and spread the marinated chicken evenly across the pan, with pineapple, bell peppers, and onion. Drizzle with the remaining sauce and toss with olive oil.
  5. Bake for 25–30 minutes, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  6. For extra flavor, turn on the broiler and broil on high for 2–3 minutes.
  7. Remove from the oven, let cool for a few minutes and garnish with sesame seeds, cilantro, or green onions before serving.
