Step-by-Step Instructions for Halloumi Carbonara
- Bring a large pot of salted water to a boil over high heat. Add the dried spaghetti and cook until al dente, about 8-10 minutes. Drain, reserving pasta water.
- In a mixing bowl, whisk together the eggs and freshly grated cheese until smooth. Set aside.
- Heat the olive oil in a non-stick pan over medium heat. Fry the halloumi cubes with smashed garlic until golden brown, about 3-4 minutes.
- Remove garlic, add the spaghetti to the pan, and pour in reserved pasta water. Toss together for 1-2 minutes.
- Turn off the heat, add the egg and cheese mixture, and toss for about 30 seconds until creamy. Add more pasta water if needed.
- Serve immediately, garnishing with extra cheese and pepper.
