  • 400 grams Dried Spaghetti Cook until al dente.
For the Sauce
  • 200 grams Halloumi Cheese Cut into 1 cm cubes.
  • 2 large Egg For a creamy sauce.
  • 50 grams Parmesan or Pecorino Romano Cheese Freshly grated works best.
  • 2 cloves Garlic Smashed whole cloves, discard after cooking.
For Cooking
  • 2 tablespoons Extra Virgin Olive Oil For frying halloumi.
  • Salt Add to pasta water.
  • Pepper Adjust to taste.

Method
 

Step-by-Step Instructions for Halloumi Carbonara
  1. Bring a large pot of salted water to a boil over high heat. Add the dried spaghetti and cook until al dente, about 8-10 minutes. Drain, reserving pasta water.
  2. In a mixing bowl, whisk together the eggs and freshly grated cheese until smooth. Set aside.
  3. Heat the olive oil in a non-stick pan over medium heat. Fry the halloumi cubes with smashed garlic until golden brown, about 3-4 minutes.
  4. Remove garlic, add the spaghetti to the pan, and pour in reserved pasta water. Toss together for 1-2 minutes.
  5. Turn off the heat, add the egg and cheese mixture, and toss for about 30 seconds until creamy. Add more pasta water if needed.
  6. Serve immediately, garnishing with extra cheese and pepper.
