- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef and 1 diced onion, crumbling the beef as it cooks until no longer pink, about 5-7 minutes. Stir in 3 cloves of grated garlic, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and a pinch of salt and pepper, cooking for another minute until fragrant.
- Add 2 cups of diced sweet potatoes, 1 can of fire-roasted diced tomatoes with juice, and 1 can of diced green chiles to the skillet. Pour in 1/4 cup of water and adjust seasoning with chili powder, cumin, salt, and pepper. Bring to a gentle simmer, cover, and cook for about 20 minutes until the sweet potatoes are tender.
- Return the ground beef mixture to the skillet, and stir well to combine. Evenly sprinkle 1 cup of shredded cheddar cheese over the top and cover again. Cook for an additional 2-3 minutes until the cheese is melted.
- Remove the skillet from heat. If desired, garnish with freshly chopped cilantro. Serve in plates or bowls.
