Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef and 1 diced onion, crumbling the beef as it cooks until no longer pink, about 5-7 minutes. Stir in 3 cloves of grated garlic, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and a pinch of salt and pepper, cooking for another minute until fragrant.
  2. Add 2 cups of diced sweet potatoes, 1 can of fire-roasted diced tomatoes with juice, and 1 can of diced green chiles to the skillet. Pour in 1/4 cup of water and adjust seasoning with chili powder, cumin, salt, and pepper. Bring to a gentle simmer, cover, and cook for about 20 minutes until the sweet potatoes are tender.
  3. Return the ground beef mixture to the skillet, and stir well to combine. Evenly sprinkle 1 cup of shredded cheddar cheese over the top and cover again. Cook for an additional 2-3 minutes until the cheese is melted.
  4. Remove the skillet from heat. If desired, garnish with freshly chopped cilantro. Serve in plates or bowls.
