  • 1.5 pounds Chicken (Dark Meat) preferred for moisture; firm tofu can be used for vegetarian
  • 4 Skewers soak in water for at least 30 minutes to prevent burning

Method
 

Instructions
  1. In a mixing bowl, whisk together the fresh ginger, minced garlic, soy sauces, coconut milk, brown sugar, fresh lime juice, and a pinch of salt and pepper until you achieve a smooth consistency.
  2. Place your chicken pieces in a large resealable bag and pour the marinade over them. Ensure the chicken is thoroughly coated, then seal and refrigerate for at least 30 minutes.
  3. Thread the marinated chicken onto soaked wooden skewers, leaving space between each piece for even cooking.
  4. Preheat your grill to medium-high temperature, or if using a grill pan, heat over medium-high and lightly oil the grates.
  5. Place the skewers on the grill, cooking for about 4-5 minutes on each side until golden brown and the chicken reaches an internal temperature of 74°C/165°F.
  6. Remove the skewers from the grill and let them rest for a minute. Squeeze fresh lime juice over the top before serving.
