- In a mixing bowl, whisk together the fresh ginger, minced garlic, soy sauces, coconut milk, brown sugar, fresh lime juice, and a pinch of salt and pepper until you achieve a smooth consistency.
- Place your chicken pieces in a large resealable bag and pour the marinade over them. Ensure the chicken is thoroughly coated, then seal and refrigerate for at least 30 minutes.
- Thread the marinated chicken onto soaked wooden skewers, leaving space between each piece for even cooking.
- Preheat your grill to medium-high temperature, or if using a grill pan, heat over medium-high and lightly oil the grates.
- Place the skewers on the grill, cooking for about 4-5 minutes on each side until golden brown and the chicken reaches an internal temperature of 74°C/165°F.
- Remove the skewers from the grill and let them rest for a minute. Squeeze fresh lime juice over the top before serving.
