Preparation Steps
- In a medium bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, and onion powder. Add salt and pepper to taste.
- Slice chicken breasts in half and coat with the marinade. Let marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat, around 400°F (200°C).
- Grill the marinated chicken for 6–7 minutes on each side until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
- Grill the corn tortillas for 1–2 minutes on each side until crispy.
- Spread a layer of refried beans on each tortilla, then add sliced chicken, shredded lettuce, diced tomatoes, and radishes.
- Sprinkle shredded cheese on top, add sour cream and fresh cilantro.
- Serve with lime wedges on the side.
