For the Shrimp
  • 1 pound Wild-caught shrimp Fresh or frozen
  • 2 tablespoons Olive oil Substitute with avocado oil if needed
  • 1 teaspoon Smoked paprika Can substitute with regular paprika
  • 2 cloves Garlic Minced
For the Corn Salsa
  • 2 ears Corn Fresh or frozen
  • 1 large Avocado Ripe
  • 1 medium Red bell pepper Diced
  • ¼ medium Red onion Diced
  • 1 handful Cilantro Chopped
  • 1 tablespoon Lime juice Freshly squeezed
For Seasoning
  • 1 teaspoon Chili powder Adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Salt Season to taste
  • 1 teaspoon Black pepper Season to taste
  • 1 unit Lime Juice for marinade and garnish

Method
 

Preparation Steps
  1. Prepare the marinade by whisking olive oil, minced garlic, smoked paprika, chili powder, cumin, salt, and lime juice in a bowl.
  2. Marinate the shrimp in the prepared marinade for at least 15 minutes.
  3. Prepare the corn for salsa by grilling or sautéing it until slightly charred.
  4. Mix grilled corn with diced red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  5. Preheat the grill to medium-high heat and skewer the marinated shrimp.
  6. Grill the shrimp for 2-3 minutes on each side until pink and opaque.
  7. Assemble the bowls with a base of rice, topped with grilled shrimp, avocado, and corn salsa.
