- In a mixing bowl, combine salsa verde, olive oil, lime juice, cumin, salt and pepper. Add chicken, coat well, cover and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat, around 400°F. Lightly oil the grates with olive oil.
- Place the marinated chicken on the grill, cooking for 4-5 minutes on one side. Flip and grill for another 4-5 minutes until the internal temperature is 165°F.
- During the last minute, place a slice of cheese on each chicken breast, close the grill lid to melt the cheese.
- Remove the chicken from the grill, let it rest for a couple of minutes. Garnish with cilantro and serve with lime wedges.
