For the Chicken
  • 2 pieces thin-sliced boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon lime juice or lemon juice
  • 1 teaspoon cumin or chili powder
  • to taste salt & freshly ground black pepper
For the Topping
  • 1 cup salsa verde homemade or store-bought
  • 4 slices pepper jack cheese or Monterey Jack for less spice
For Garnish
  • to taste fresh cilantro optional
  • 1 pieces lime wedges optional

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine salsa verde, olive oil, lime juice, cumin, salt and pepper. Add chicken, coat well, cover and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat, around 400°F. Lightly oil the grates with olive oil.
  3. Place the marinated chicken on the grill, cooking for 4-5 minutes on one side. Flip and grill for another 4-5 minutes until the internal temperature is 165°F.
  4. During the last minute, place a slice of cheese on each chicken breast, close the grill lid to melt the cheese.
  5. Remove the chicken from the grill, let it rest for a couple of minutes. Garnish with cilantro and serve with lime wedges.
