Ingredients
  

For the Chicken Marinade
  • 1 pound Boneless Skinless Chicken Breast Cut into cubes
  • 3 tablespoons Olive Oil Can substitute with avocado oil
  • 2 tablespoons Lemon Juice Fresh juice preferred
  • 3 cloves Minced Garlic Can substitute with garlic powder
  • 1 teaspoon Dried Oregano Thyme can be used as an alternative
  • to taste Salt
  • to taste Pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Low-fat for lighter version
  • 1 medium Cucumber Finely grated and squeezed to remove excess moisture
  • 2 tablespoons Fresh Dill Mint can be used for variation
  • 1 tablespoon Lemon Juice
  • a pinch Salt
For Serving
  • 4 pieces Pita Bread Choose gluten-free if needed

Method
 

Marinating and Preparing
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add cubed chicken breast to the marinade and coat well. Cover and refrigerate for at least 30 minutes, ideally 2 hours.
  2. While the chicken marinates, mix Greek yogurt, grated cucumber, fresh dill, lemon juice, and salt in another bowl. Stir until well blended and chill in the refrigerator.
Grilling Instructions
  1. Preheat the grill to medium-high heat (about 400°F). If using wooden skewers, soak them in water for 30 minutes.
  2. Thread marinated chicken pieces onto skewers, leaving space between each piece.
  3. Grill the skewers for 10-12 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
  4. Remove skewers from the grill and let rest for a few minutes before serving with tzatziki sauce and pita bread.
