  • 1 lb Ground Chicken or ground turkey
  • 1 Large Egg acts as a binder
  • 1 cup Breadcrumbs gluten-free optional
  • 2 tbsp Olive Oil for cooking
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Fresh Parsley chopped; or dill
  • 1 tbsp Dried Oregano
  • 2 cloves Garlic Cloves minced
  • 1 tbsp Lemon Zest from 1 lemon
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Lemon Orzo
  • 1 cup Orzo Pasta or substitute with rice/quinoa
  • 4 cups Chicken Broth or Water for cooking
  • 2 tbsp Butter or Olive Oil for flavor
  • 2 tbsp Lemon Juice fresh
Optional Garnishes
  • 1 tbsp Fresh Dill optional
  • Optional Toppings crumbled feta, parsley, lemon wedges

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, egg, breadcrumbs, feta, parsley, oregano, garlic, lemon zest, salt, and pepper. Form into 16-20 meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 4-5 minutes each side until golden brown and cooked through.
  3. In a pot, bring broth or water to a boil, add orzo and cook according to package instructions, about 8-10 minutes. Stir in butter, lemon juice, zest, garlic, and season.
  4. Plate the lemon orzo, top with meatballs, and garnish with parsley, dill, and feta. Serve with lemon wedges.
