Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, and optional mozzarella. Add the minced garlic, beaten egg, milk, chopped parsley, and Italian seasoning. Season generously with salt and black pepper. Mix gently until just combined.
  3. Transfer the mixture onto a parchment-lined baking sheet or lightly greased loaf pan. Shape it into a loaf about 8-10 inches long.
  4. Drizzle 1-2 tablespoons of olive oil over the top of the meatloaf for an extra crispy crust.
  5. Place the shaped meatloaf in the preheated oven and bake for 35-40 minutes until firm and internal temperature reaches 165°F (74°C).
  6. Once cooked through, sprinkle the reserved mozzarella cheese on top and return to the oven for an additional 5-7 minutes.
  7. Let the meatloaf rest for 5-10 minutes before slicing.
