Step-by-Step Instructions
  1. Cream together butter and sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.

  3. In a separate bowl, mix flour, baking soda, and salt. Gradually add to the creamed mixture until a soft dough forms.
  4. Refrigerate the dough for 10-15 minutes to make it easier to handle.
  5. Prepare cinnamon sugar by mixing granulated sugar and ground cinnamon until evenly combined.
  6. Preheat oven to 350°F (175°C). Roll the chilled dough into balls, coating in cinnamon sugar.
  7. Bake dough balls for 9-11 minutes, until edges are golden and centers are soft.
  8. To prepare filling, melt butter and mix with dulce de leche until smooth.
  9. Spread dulce de leche filling on one cookie and sandwich with another cookie.
