- Preheat your oven to 200°F (95°C) and prepare two baking sheets with parchment paper.
- In a large mixing bowl, combine egg whites and a pinch of salt. Beat on medium speed until soft peaks form, about 2-3 minutes.
- Gradually add the sugar one tablespoon at a time, continuing to beat on medium-high speed until stiff, glossy peaks form, about 5-7 minutes.
- Gently fold in the instant coffee granules and vanilla extract until fully incorporated.
