Ingredients

For the Crostini Base
  • 1 loaf Fresh Baguette Ciabatta can be used for a different twist.
  • 2 tablespoons Extra-Virgin Olive Oil Any mild oil can substitute, but extra-virgin adds depth.
For the Ghostly Topping
  • 8 ounces Fresh Whole-Milk Mozzarella Consider low-moisture mozzarella if fresh is unavailable.
  • 1/3 cup Pesto Sun-dried tomato pesto is a fun alternative.
  • 12 ounces Campari Tomatoes Grape tomatoes can work just as well if Camparis aren’t available.
For the Finishing Touch
  • 2 tablespoons Balsamic Glaze A thicker glaze will help create defined ghost faces.

Equipment

  • Oven
  • Mixing Bowl
  • Baking sheet
  • Cookie Cutter

Method

Step-by-Step Instructions for Caprese Crostini Ghosts
  1. Begin by placing the fresh whole-milk mozzarella in the freezer for about 10 minutes.
  2. While the mozzarella chills, slice the fresh baguette diagonally into ½-inch thick pieces.
  3. Preheat your oven to 400°F (200°C). Toss the sliced baguette with olive oil and arrange on a baking sheet. Bake for 8-9 minutes.
  4. Once the mozzarella is chilled, slice it into ¼-inch thick planks and cut ghost shapes using a cookie cutter.
  5. Spread pesto on toasted baguette slices, add a slice of tomato and a mozzarella ghost, and decorate with balsamic glaze.
  6. For the remaining crostini, top them with tomato slices and drizzle with balsamic glaze. Serve immediately.
