Method
 

Chili Oil Preparation
  1. Heat sesame oil in a medium pan over medium heat. Sauté garlic and crushed red pepper flakes for 2-3 minutes until golden. Remove from heat and cool.
Sauce Preparation
  1. In a bowl, whisk soy sauce, hoisin sauce, honey, rice vinegar, and peanut butter. Gradually mix in water until smooth.
Noodle Cooking
  1. Boil salted water, add noodles, and cook according to package instructions for 4-5 minutes. Drain and set aside.
Broth Simmering
  1. Combine chicken broth, mushrooms, and chopped shallot in a large pot. Simmer for 5-7 minutes until mushrooms are tender.
Spinach Incorporation
  1. Add fresh spinach to the broth and stir gently until wilted, about 1-2 minutes.
Combine Everything
  1. Stir in the sauce and add cooked noodles, mixing until everything is well combined.
Serving
  1. Serve in bowls, drizzling with extra chili oil and garnish with green onions.
