Method
 

Preparation Steps
  1. In a mixing bowl, whisk together soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes until combined. Marinate boneless skinless chicken thighs for at least 20 minutes.
  2. Prepare the creamy peanut sauce by mixing peanut butter, honey, rice vinegar, and warm water in a small bowl until smooth.
  3. Combine shredded cabbage, carrots, bell pepper, scallions, and cilantro in a large bowl. Drizzle with lime juice and rice vinegar, adding sugar and salt to taste. Set aside for 10 minutes.
  4. Preheat the grill or grill pan. Grill the marinated chicken for 5-7 minutes each side until fully cooked. Let rest before slicing.
  5. Warm tortillas or flatbreads, spread peanut sauce, add slaw and sliced chicken, drizzle more peanut sauce, fold tightly, and serve.
