Step-by-Step Instructions
  1. In a blender, combine 2 cups of frozen cherries, 1 cup of dairy-free milk, 2 tablespoons of maple syrup, and 1 teaspoon of almond extract. Blend on high for about 30 seconds until smooth.
  2. Pour the smooth cherry mixture into a large jar or bowl and add 1/4 cup of chia seeds. Stir vigorously for about 1 minute to avoid clumping.
  3. Allow the mixture to sit for approximately 10 minutes at room temperature, stirring again to break up any clumps.
  4. Cover and refrigerate the mixture for at least 4 hours or overnight to allow it to thicken.
  5. Once set, stir the pudding well and add any additional maple syrup if desired. Serve with desired toppings.
