- In a blender, combine 2 cups of frozen cherries, 1 cup of dairy-free milk, 2 tablespoons of maple syrup, and 1 teaspoon of almond extract. Blend on high for about 30 seconds until smooth.
- Pour the smooth cherry mixture into a large jar or bowl and add 1/4 cup of chia seeds. Stir vigorously for about 1 minute to avoid clumping.
- Allow the mixture to sit for approximately 10 minutes at room temperature, stirring again to break up any clumps.
- Cover and refrigerate the mixture for at least 4 hours or overnight to allow it to thicken.
- Once set, stir the pudding well and add any additional maple syrup if desired. Serve with desired toppings.
