  • 1/2 cup Greek yogurt or regular yogurt

  • 1 tsp curry powder plus more if desired
  • 3 tbsp vegetable oil or olive/coconut oil
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 1 onion diced
  • 1 cup tomato sauce or crushed tomatoes
  • 1 tsp sugar optional
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper optional
  • 1 cup heavy cream or coconut cream for dairy-free
  • 1 tsp garam masala
  • fresh parsley for garnish

Method
 

Step-by-Step Instructions
  1. Marinate the chicken with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt for at least 15 minutes.
  2. Cook the marinated chicken in a skillet with vegetable oil and butter over medium-high heat for 7–10 minutes until golden brown.
  3. In the same skillet, add remaining butter, garlic, and onion; sauté for 5 minutes until onion is translucent.
  4. Add tomato sauce, sugar, salt, and black pepper; stir and let it simmer for 5–7 minutes.
  5. Mix in heavy cream, garam masala, and extra curry powder; simmer for another 5 minutes.
  6. Return cooked chicken to the skillet and stir to coat in the sauce; simmer for an additional 5–10 minutes.
  7. Garnish with fresh parsley and serve hot with naan or rice.
