  • 2 tablespoons Rice Vinegar or substitute with apple cider vinegar
  • 1-2 tablespoons Sugar or sweetener to taste
  • 1-2 tablespoons Sesame Seeds for garnish

Method
 

Step-by-Step Instructions
  1. Start by washing and drying the green and purple cabbage. Thinly slice or shred about 4 cups of each cabbage and place them in a large mixing bowl.
  2. Next, julienne 2-3 medium carrots and add them to the bowl. Finally, slice 1 red bell pepper and 3 green onions into bite-sized pieces, tossing everything together.
  3. In a medium bowl, combine 1/4 cup sesame oil, 1/4 cup soy sauce (or tamari), and 2 tablespoons of rice vinegar. Whisk in 1-2 tablespoons of sugar and sesame seeds.
  4. Pour the dressing over the prepped vegetables, gently tossing to combine. Let the slaw marinate for at least 10-15 minutes.
  5. After marinating, toss the slaw again and serve, garnished with extra sesame seeds and chopped cilantro.
